Our story

A small fromagerie with big affineurs.

Zebästijen's Fromagerie was born from a simple idea: bring cheeses straight from the cellars of Europe to a counter where every wheel can be explained.

It started in 2019 with a backpack full of Comté and a borrowed tasting table. Today our small team works with eleven affineurs across France, Italy, Spain, Germany and Switzerland — most of them family operations we visit twice a year.

What we believe

  • Raw milk wherever the law allows it.
  • Whole wheels, never pre-cut warehouse cheese.
  • Honest information about origin, breed and ripening.
  • Fair prices for the people in the cellars.

Why a webshop?

Many regulars asked us to reserve cheeses online so they don't queue. The shop you are looking at is our answer: pick at home, we cut it fresh, you pick it up — or have it delivered if you live nearby.
